How to prepare a delicious Eid Sugar Cookies
Ingredients
2 1/4 sticks of butter 1 1/2 cup icing sugar 1 egg 2 tsp vanilla 2 1/2 - 2 3/4 cups flour 2 tsp baking powder 1 tsp salt To decorate cookies you can use: fondant, royal icing or our easy glossy icing recipe. Easy glossy icing: 1 cup icing sugar 2 tsp milk 2 tsp corn syrup 1/4 tsp vanilla Food coloring of choice
Method
1. To make cookies, beat butter and sugar until fluffy, few minutes. Add egg and vanilla; beat well. 2. Mix 2 1/2 cups of flour, baking powder and salt. Add to butter mixture and mix till combined; avoids over mixing. 3. Use the extra flour to flour the surface while rolling the dough; use your favourite cookie cutter. 4. Line a baking sheet with parchment paper and arrange cookies separated around 5 cm apart. 5. Refrigerate the baking pan while heating the oven. Heat oven to 180 c or 350 f for 5-10 min before baking. Take baking pan immediately out of the fridge and place in the hot oven. Bake till golden around the edges; about 10-12 min depending on the size of cookies. Let cookies rest in the baking pan for 5 min. Transfer to a wire rack and let cool completely. 5. To make the icing, sift sugar and add the rest if ingredient and mix well till you have a smooth consistency. If too dry add more milk 1/2 tsp at a time. If too runny add sifted icing sugar.
