How to make Spinach Tabouleh

Ingredients

6 cups washed, dried and chopped spinach leaves 3 tomatoes, seeded and chopped 1 cup fine bulgur soaked in water for 5 min then water should be squeezed out well 1 green onion finely chopped For the dressing: Juice of two large lemons ½ cup extra virgin olive oil ½ tsp ground cinnamon (optional but it adds a nice taste to this Tabouleh, I don’t use it for parsley tabouleh though) A sprinkle of ground red chilli (optional) Salt and black pepper to taste

Method

  1. Mix Tabouleh ingredients together. (You can do this at least 4-5 hours ahead of time, cover it with plastic wrap and leave it in the fridge. Add the dressing when you serve it)
  2. Mix all dressing ingredients in a jar and shake well. Add to Tabouleh and serve immediately.
